If you add enough honey, the taste is similar to Reese’s peanut butter cups… absolutely yum!
Almond butter yields tasty results for those who can’t have peanuts.
I don’t have measurements for this recipe… adjust it according to your own taste and desired sweetness. Natural nut butters are oily and tend to require more cocoa powder.
Peanut Butter Chocolate Balls
all natural peanut butter (or almond butter)
unsweetened cocoa powder (I use Nestle’s brand)
shredded coconut (unsweetened)
Spoon peanut butter into a medium size glass bowl. Add cocoa powder and stir until smooth. Sweeten to taste with raw honey. Mix ingredients until the texture is similar to a soft “dough”. You should be able to work the mixture with your hands without it sticking to your fingers. Add more cocoa powder if the dough is too sticky.
Pinch off small balls and roll them in shredded coconut. Line the balls on a cookie sheet or glass plate and chill for about 30 minutes.
