This one-dish meal is simple to prepare and delicious to eat! If I have left-over tomato soup on hand, I use it instead of the tomato sauce called for in the recipe. If you like a heartier meal, add extra ground beef.
One-Dish Spanish Rice
1 C uncooked brown rice
2 1/2 C tomato sauce or tomato soup
2 C water
2 tsp chili powder
½ lb ground beef, cooked
½ medium onion, finely diced
1 C shredded Cheddar cheese
Place rice, tomato sauce, tomato soup, water, and chili in a large casserole dish; stir. Mix in cooked ground beef and onions. Cover and bake at 350-degrees for one hour and 15 minutes. Stir periodically while rice bakes to prevent it from sticking. Remove from oven and sprinkle with cheese; return to oven and heat until cheese melts. Garnish with salsa, if you like, and serve with a salad.
Left-over Make-over: Mexican Rice & Cheese Wraps
Our family always has a lot of left-overs from this recipe. For a quick “make-over” meal, I heat left-over rice and meat in a skillet and spoon it into warmed corn tortillas. Sprinkle with extra cheese and spoon salsa onto rice before wrapping. Delicious!
