Whole Grain Waffles


The following recipe is based on my Grandma’s basic pancake and waffle recipe. I tweaked it to make it gluten-free and full of delicious, whole foods.

If you are not gluten or wheat free, simply use whole wheat pastry flour in place of Shoshanna’s Gluten-free Flour Mix and omit the xanthan gum.

I ground my own gluten-free flour using the Wonder Mill, by far my favorite grain mill!




Recipe: Whole Grain Belgian Waffles




Combine dry ingredients in a large mixing bowl.

Pour in milk and water, then add remaining ingredients. Stir just until well combined. Batter will be slightly thick.

Heat your waffle iron (I use the Oster Belgian Waffle Iron and love it).

Once waffle iron is ready, oil and spoon desired amount of waffle battle onto griddle. Close the lid and let it cook!  Repeat with remaining batter.

Serve waffles with a dallop of butter and drizzle with maple syrup.

Recipe yields about 1 1/2 quarts of batter, or enough waffles to feed my household of seven hungry people.

  1. I saw a recipe for pancakes the other day that used Flax meal and ricotta cheese. Can you help me find it again? I bought the meal and the ricotta cheese and I can’t wait to try it. It was also served with the berry sauce. Blessings!
