I was on the “list” to bring something sweet to our ladies’ fellowship meeting last week. Unfortunately, this is the end of the month and my pantry is looking as bare as Old Mother Hubbard’s. What exactly can a girl make without oil and flour??
I found this recipe in an old Taste of Home magainze, and decided to give it a try. These cookies were so easy to make (after all, they hardly have any ingredients!), cheap, and completely yum.
1 C all natural peanut butter
1 C honey (or sucanat, or brown sugar)
2-1/2 C oats
1 tsp baking soda
In a small bowl, cream peanut butter and honey (or sucanat) until fluffy. Beat in egg. Add oats and baking soda to creamed mixture. Drop by tablespoonfuls onto a greased baking sheet; flatten slightly. Bake at 350-degrees for 6 to 8 minutes. Recipe yields approximately 2 dozen cookies, depending on how small you make them.
