We love peanut butter around my house.
We eat it in cookies.
We eat it on pancakes.
We eat it on sandwiches.
We even eat it on a spoon. But we don’t eat the spoon. 🙂
Since peanut butter is good in just about any food (that is my humble opinion), it only makes sense that we love, love, love peanut butter granola cereal. This is a favorite breakfast for my kids. They always get excited when a pan of homemade peanut butter granola comes out of the oven!
Here’s the recipe for my tried-and-true homemade granola… our family has enjoyed this healthy, easy-to-make breakfast cereal for several years.
Homemade Peanut Butter Granola
8 C old fashioned oats
½ tsp sea salt
1/3 cup coconut oil (or oil of your choice)
½ cup raw honey
1 tsp vanilla
1 cup all natural peanut butter (I use “Skippy” brand)
In a large bowl, combine oats and salt. In a small sauce pan heat oil, honey and peanut butter over medium heat, stirring well. Add vanilla. Remove from heat and pour over the oats; mix well. Spoon into a 9×13-inch casserole dish or cake pan.
Bake at 325-degrees for 45 minutes, stirring every 10 to 12 minutes. Granola is done when it begins to brown on top– just be sure to stir it frequently to avoid burning! Granola will keep in an air-tight container for several weeks– if your family doesn’t eat it up before then!
