This is the first granola recipe I ever made! I shared it on my blog back in May 2007. As a whole foods newbie, I felt like I was branching out and stepping high with this recipe! Enjoy!
Homemade Breakfast Granola
8 C rolled oats
1/2 C plus 1 tbsp extra virgin coconut oil
1 tbsp pure vanilla
3/4 C raw honey
2 tbsp sugar cane
1/2 C each: almonds, walnuts, pecans (chopped)
1/2 C each: raisins, mixed dried fruit (I used an assortment of blueberries, cherries & cranberries)
1/3 C dried bananas
Preheat oven to 325 degrees. Combine oats, oil, vanilla, honey and sugar cane. Spread in a single layer on a baking sheet. Bake 30-40 minutes, turning and stirring every 10 minutes. Add nuts after first 10 minutes. Remove from oven; cool. Stir in dried fruit. Store in an air tight container. Serve with milk and enjoy!!
Frugal Tip: Since nuts can be expensive, I buy mine at the dollar store. You don’t have to use all three nut varieties if you’d rather cut out the additional cost. We are blessed to have several pecan trees to harvest from, so I usually opt for pecans when they are in season.
