Favorite Healthy Foods for Kids

 

Today’s theme: Kid-Friendly Favorites.

One of my homemade, frugal and healthy meals for children is a simple Flat Bread Pizza.  It is easy to prepare (even kids can help put it together!) and is great for a busy afternoon when you need something quick.

To make this recipe even more frugal, try using a homemade pizza dough in place of the store-bought flat bread.  (I have several delicious and easy homemade pizza dough recipes… I’ll have to share sometime.)

Easy Flat-Bread Pizza
*1 package whole wheat flat bread (8 pieces)– I used Kangaroo brand, get a coupon
*1 C tomato sauce
*1 tsp oregano
*1/2 tsp basil
*1/2 tsp garlic powder
*dash of sea salt
*Canadian bacon or turkey pepperoni
*mushrooms, sliced olives, sauteed onions, or other desired veggie toppings
*shredded cheese

Directions: Line a baking sheet (or baking sheets) with flat bread pieces.  Sprinkle with cornmeal, if desired. 

In a small bowl, combine tomato sauce and spices until well blended.  Spoon your “pizza sauce” onto flat bread “crusts”. 

Arrange Canadian bacon, pepperonis, and favorite vegetable toppings on top of sauce.  My kids enjoy sauteed onions, sliced olives, and mushrooms, but use whatever veggies your children like best (or whatever veggies you want your children to like best!).

Last of all, top your “pizzas” with shredded cheese.  I usually use mozzarella, but sometimes opt for Colby Jack for a little variety. 

Bake pizzas in a preheated 350-degree oven for approx. 8 to 12 minutes, or even longer, depending on how crispy you want the “crust”.

Once the pizzas are done and have cooled a little, cut into child-size slices and serve along with a plate of raw veggies and homemade Ranch.

Because the weather has been so beautiful lately, my little family enjoyed this pint-size meal alfresco style…
These easy pizzas make a perfect “picnic” lunch and a tasty snack later in the afternoon!
