My husband is not a big cabbage fan but he loves this soup- the flavor is truly delicious and comforting, especially on a cold day.
Comforting Winter Soup
1 head cabbage, torn into pieces
4 C fresh carrots, chopped
1 large onion, diced
4 C ham, cubed (I usually use turkey ham)
2 quarts chicken broth
salt & pepper to taste
In a large pot, bring 2 quarts water to boil; add 3 to 4 cubes chicken bullion and let dissolve. Add cabbage, carrots and onion; boil on high for 8 to 10 minutes, then reduce heat. Add ham and let simmer for 30 minutes or until vegetables are tender. Stir occasionally, adding additional water if needed. Salt and pepper to taste.
