Coconut Banana Bread {gluten, sugar, and dairy free}

If you’re in the mood for a savory bite of wholesome goodness, let me tempt you with this Coconut Banana Bread recipe!

I tweaked my grandma’s Blender Banana Bread recipe to create these moist loaves of Coconut Banana Bread.  They are free of gluten, dairy, and sugar, and decadent enough to serve on a bone china plate.  This evening, I enjoyed a slice (or two) with a cup of Shoshanna’s Fast Asleep Tea.  Oh my!

    Looks very yummy! I’ve never really considered making anything GF or sugar free. I’ll have to research exactly what xyitol is? I also need to research this stevia, see if it’s good or bad. LOL Clearly I’m used to just regular flour & sugar 🙂 I’d love to make something sugar free and share it with some family members that would enjoy it!

      Both Xylitol and Stevia are healthy substitutes for sugar. Unlike “splenda” and “sweet-n-low”, they are completely natural! Stevia is derived from the herb by the same name. Xylitol is a sugar alcohol and is actually VERY good for oral health. (You can read more about xylitol here: http://www.xylitol.org/questions-about-xylitol.)
