My mom recently lent me a copy of Once-A-Month Cooking, by MiMi Wilson and Mary Beth Lagerborg.

I was very pleased with this little volume of recipes, tips, and inspiration!

The book is divided into easy to read and use segments, including an overview of the once-a-month cooking plan, grocery shopping lists, tips for freezer storage, and recipe plans for 2-weeks and a month. I found the recipes easy to prepare and enjoyable to eat- always a good combination!

The book suggests setting aside an entire day for cooking up a month’s worth of meals but I applied the process in smaller doses. Since being on my feet for extended periods of time wasn’t a good idea (I was 8-months pregnant when I began my little meal-freezing project), I simply used recipes from the book for my weekly menu calendar, prepared double of the meal on a particular day, and froze the extra one.

My freezer is now filled with delicious, ready-to-bake yummies: Taco Pie, Lasagna, Joes to Go, and Bakes Beans and Hamburger to name a few.

I’m looking forward to a few weeks of “easy” meal preparation once our baby arrives!

The authors also share some wonderful principles on hospitality… I’ll share more on that next week!
