Despite its misleading name, buckwheat is a psuedograin and bears no relation to wheat.
Since it is a seed and not a grain, buckwheat is kosher for those adhering to a grain-free diet.
Buckwheat is rich in maganesium, flavnoids, fiber, and phytonutrients, and has been found in clinical studies to reduce the risk of heart disease and gallstones. It is also known to regulate blood sugar. (source)

This soft, slightly nutty “grain” is a favorite at our house! I purchase buckwheat in bulk from Azure Standard and grind it in our Blendtec.
These delectable pancakes are probably my favorite way to enjoy buckwheat.
The following recipe is gluten-free, grain-free, and egg-free.
what you’ll need:
2 C filtered water
2 C buckwheat groats, not ground
2 T flax seed
1 apple, cored
3 TBSP maple syrup or honey
1 tsp pure vanilla
1/2 tsp sea salt
2 TBSP baking powder
how to make it:
In a high powered blender (I use the Blendtec), process all ingredients on high for 2 minutes.
Pour batter onto a heated, well-oiled cast iron skillet. Press 4 or 5 fresh or frozen blueberries into pancake.
As soon as the batter begins to bubble, flip pancake. I find it helpful to briefly re-oil the skillet each time I flip a pancake or add more batter; this greatly prevents these pancakes from sticking!
The batter cooks quickly, so stay nearby to turn your pancakes or they will burn before you know it!
Drizzle with melted butter and serve with maple syrup.
